spinachGreen vegetables are the foods most commonly missing in modern diets. Learning to incorporate dark, leafy greens into the diet is essential to establishing a healthy body and immune system. When you nourish yourself with green vegetables, you may naturally crowd out the foods that make you sick. Green vegetables help build your internal rainforest and strengthen the blood and respiratory system.

 

 

Leafy green vegetables are also high-alkaline foods. The alkaline minerals in our bodies are used to neutralize acidic conditions caused by our modern day diets and lifestyles. Green vegetables help to replenish our alkaline mineral stores and continue to filter out pollutants. Although choosing organic is best, eating non-organic greens is still preferable to not eating any greens at all!

Just make sure you thoroughly wash them in good quality water before consuming.

Nutritionally, green vegetables are very high in calcium, magnesium, iron, potassium, phosphorous, zinc and vitamins A, C, E and K. They are loaded with fibre, folic acid, chlorophyll and many other micro-nutrients and phyto-chemicals. A few of their nutritional benefits include:

Eating green vegetables can be an amazingly enjoyable experience. Firstly, taste is all about the quality of the produce…so try to get your vegetables from local farmers markets where you know the produce is fresh! Green smoothies are a fantastic and easy way to get a load of the benefits of greens into the system all at once so why not give them a go! If you enjoy cooking try using herbs, spices, seasonings and condiments such as good quality salt, raw apple cider vinegar, dulse flakes, organic tamari, miso and cold pressed unrefined oils. These are all delicious and healthy flavour boosters.
